Pork Satay Skewers

The Recipe

Ingredients

  • · 400g pork fillet or shoulder
  • · 250ml coconut milk
  • · 2 tablespoons Thai red curry paste
  • · juice of 1 fresh lime
  • · 1 tbsp fish sauce
  • · 1 tbsp soy sauce
  • · 2 crushed garlic cloves
  • · 2 inches fresh ginger- peeled & grated
  • · 150ml coconut milk
  • · 4 tablespoons crunchy peanut butter
  • · juice of 1 fresh lime
  • · ½ tsp fresh chili flakes
  • · 2 tbsp soy sauce
  • · 1 tbsp fresh coriander, finely chopped
  • Cooking time: 20 Minutes
  • Preparation time: 40 Minutes
  • Serves: 2-3

Method

1.

Slice the pork fillet into 2inch cubes.

2.

Add all the ingredients for the marinade to a mixing bowl.

3.

Add the chopped pork meat. Cover and place in the fridge to marinade for at least 3 hours.

Soak bamboo skewers for at least an hour before you start - this will help prevent them from burning under the grill.

To make the dipping sauce - add all the ingredients to a non-stick pan.

Bring up to a medium-heat for a minute until all ingredients are well combined. Transfer to a bowl to cool.

7.

Thread the pork onto the skewers.

8.

Arrange on a tray and grill for approx 4 minutes each side.

9.

Keep some of the marinade liquid to baste about half-way. (Disregard the remaining marinade liquid.

10.

Once cooked, serve the skewers with the peanut dipping sauce and slices of fresh lime.
