BBQ Ribs with a Sweet & Spicy Glaze

Ingredients

  • · 1.5-2kg pork ribs
  • · 1 tsp peppercorns
  • · 2 tbsp salt
  • · 300/400ml BBQ sauce
  • · 2 tbsp groundnut oil
  • · 4 tbsp tomato ketchup
  • · 4 tbsp brown sugar
  • · 1 1/2 tsp cayenne pepper
  • · 2 tsp smoked paprika
  • · 2 cloves garlic, crushed
  • · 3 tablespoons white wine vinegar
  • · 1 tsp garlic powder
  • · 1 tsp chilli flakes
  • Cooking time: 3 Hours
  • Preparation time: 20 Minutes
  • Serves: 4-6

Method

1.

Place the rack of ribs in a large stock pot. Cover with water, garlic cloves, salt, peppercorns and bring up to the boil.

Reduce down to a simmer and cook for a further 40 minutes.

Drain and rinse into a colander and set the cooked ribs to one side.

In a large mixing bowl add the BBQ sauce, garlic powder, chili flakes, cayenne pepper, smoked paprika, oil, vinegar, tomato ketchup and brown sugar. Stir to combine.

Transfer the ribs to a large oven-proof dish. Pour over the BBQ sauce mix, making sure to coat all the meat. Cover the dish with foil.

Place in a pre-heated oven (180c / 160 fan) for 40 minutes. After 40 minutes remove from the oven, baste in the sauce and make sure all ribs are covered in sauce. Cook for a further 20 minutes without the foil, until the meat is tender.

7.

Serve with any remaining sauce.
